4 large baking potatoes
4 ounces cream cheese
1/2 cup sour cream
1 to 2 teaspoons salt
1/4 teaspoon black pepper
1/2 cup milk or less
1 cup grated Cheddar cheese (optional)
Peel and cube potatoes. Place potatoes in a large pot and cover with cold water. Bring to a boil. Reduce heat, and simmer over medium heat for 20 minutes.
Drain water from potatoes. Add cream cheese, and mash with a hand mixer or potato masher. Once they are well mashed, add sour cream, salt and pepper. If you feel the mashed potatoes are too thick, add up to 1/2 cup milk.
