Canned Corn Starch Safety

We received an inquiry from a concerned Cook'n Customer who was worried about the use of corn starch rather than Clear-Jel in some canned pie filling recipes. Here is what our Dietitian Desi had to say...



USDA canning recipes call for a heat stable cornstarch called Clear-Jel A. It is a modified type of cornstarch. Using regular cornstarch is not harmful in these recipes, you just won't win any blue ribbons at the county fair. Regular cornstarch doesn't hold up in the processing. The pie filling consistency breaks down in the jar, creating a more liquid, less viscous product.
