No Sugar Added Lemon Meringue

I am a diabetic. I have learned ways to make almost any pie 'no sugar added' (NDS) so I can eat it an it tastes great to the non-diabetics in my family. However, the one exception is Lemon (or Lime) Meringue Pie.

I can make it NSA Lemon meringue pie, but it has too much cornstarch in it. (The body uses cornstarch just like sugar and it raises the blood sugar levels). My favorite pie in the whole world is lemon meringue. How can I make it without the cornstarch?

Hi Millie,

You can substitute flour for cornstarch. The texture would not be the clear yellow pudding, but it would be thickened. Replace the cornstarch with 2 times the flour. (If the recipe calls for 4 tablespoons cornstarch, you would use 8 tablespoons flour).

Additionally, there are many types of thickeners on the market. I'm not sure how the body processes them, but one is called Thick-it 2 and it has no maltodextrin; thus, it is supposed to be good for diabetics. You'd stir it into the lemon liquid (hot or cold), and it would thicken it for you. It would make your pie filling clear, like you'd expect it to be.

You can buy thick-it 2 through Amazon or find it through medical supply stores. My natural health store also sales a similar item. Type in "thick-it 2" in your search engine, and you'll find many more retailers.
