1 1/4 cups Original Bisquick®
1/4 cup margarine or butter, softened
2 tablespoons boiling water
1 cup shredded Swiss cheese (4 ounces)
1 (6-ounce) package sliced Canadian-style bacon, chopped
4 medium green onions, sliced (1/4 cup)
1 1/2 cups half and half
3 eggs
1/2 teaspoon salt
1/4 teaspoon ground red pepper (cayenne)
1. Heat oven to 400°. Grease pie plate, 9 x 1 1/4 inches. Stir Bisquick and margarine until blended. Add boiling water; stir vigorously until soft dough forms. Press dough on bottom and up side of pie plate, forming edge on rim of pie plate.
2. Sprinkle cheese, bacon and onions over crust. Beat half-and-half and eggs; stir in salt and red pepper. Pour into crust.
3. Bake 35 to 40 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving.
HIGH ALTITUDE (3500 to 6500 feet): Heat oven to 375°. Bake about 40 minutes.
BETTY'S TIP: For an easy-on-the-cook brunch, do as much as possible ahead of time. Chop the Canadian-style bacon, shred the cheese and slice the onions. You can even combine the half-and-half mixture. The quiche will be a snap to put together in the morning.
