Celery Confusion
Regarding the celery in the wagon wheel meatloaf recipe. The recipe calls for "2 stalks celery, diced". That's a L O T of celery, do you mean two RIBS of celery?.... please reply.

Hi Lynne,
You're correct. It should be 2 ribs of celery. However, most cooks no longer know the difference between a stalk and a rib. I notice that the terms are now used interchangeably in many recipes. I've also seen recipes call for the entire stalk of celery by asking for a "bunch" of celery; or I've seen recipes that ask for a rib of celery by specifying a "stick".
This is where your cooking experience comes in handy. By analyzing the recipe, you can determine what is most likely requested in individual recipes. For example, in this meatloaf one, no one wants "celery" loaf, so "stalk" definitely refers to "ribs". In Celery Soup, however, a "stalk" would most assuredly mean the entire bunch of celery.
