Crab Omelet
Serves 2
Ingredients:
4 egg1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 cup crabmeat
1/2 teaspoon lemon juice
1 teaspoon sesame oil
3 scallion , finely chopped
1 green chili , finely chopped
1. Beat eggs slightly as for French omelets. Season with salt and pepper.
2. Season crab meat with salt and pepper to taste and add lemon juice.
3. Grease a heavy skillet with oil and gently fry half the onions and chili for a minute or two. Pour in half the beaten eggs and cook until set and golden on the bottom, creamy on top.
4. Meanwhile heat crab meat in a separate pan. Spoon half the crab meat down the center of the omelet and fold over once. Slide on to a plate and serve hot. Repeat with remaining mixtures to make a second omelet.
