Mexican Rice
Serves 5
Ingredients:
1 1/2 cup rice2 tablespoon butter
3 cup chicken broth
2 ounce chopped green chili
1 cup cubed cheddar cheese
Saute rice and butter in large skillet until slightly brown. Add broth and chilies cover and cook until rice is almost done. Add cheese cubes to top of rice (do not stir). Cover and cook until rice is done and cheese is melted.
