Monday
Dovetailing Tips: Today you will pay your dues at the cutting board, but you will be happy you did when you are so far ahead for the rest of the week. Slice 2 1/2 cups of carrots. This will give you the 1/2 cup you need today and leave you with plenty for Tuesday and Wednesday as well. As long as you have the knife and red bell peppers out, go ahead and chop 1 cup extra. This will be used tomorrow. Last, but not least, are the onions! You need one wedged for this meal and an additional 2 cups of chopped onion will take you sailing through the week!
Tuesday
