Asian Fried Rice
Serves 4
Ingredients:
2 tablespoons peanut oil1/4 cup chopped onion
1/2 cup sliced carrot
2 tablespoons chopped green peppers
2 cups cooked rice
1/2 cup water chestnut, drained
1/2 cup sliced mushrooms
2 tablespoons lite soy sauce
3 egg substitute equivalents, beaten
1/2 cup sliced scallion
1. In a large skillet, heat oil. Sauté onion, carrot, and green pepper for 5 to 6 minutes.
2. Stir in rice, water chestnuts, mushrooms, and soy sauce, and continue to cook for 8 to 10 minutes.
3. Stir in eggs, and continue to cook for another 3 minutes. Top with sliced scallions to serve.
