Cheesy Risotto with Onions
Serves 6
Ingredients:
1 3/4 cups water3/4 cup uncooked brown rice or white rice
2 cups chopped yellow onions
3 ounces shredded reduced-fat sharp cheddar cheese (3/4 cup)
1/4 teaspoon garlic powder
1/8 teaspoon cayenne pepper
3/4 teaspoon salt
1/8 teaspoon black pepper
1. Boil water in a medium saucepan and stir in rice and onion. Cover and simmer 35 minutes for brown rice, 20 minutes for white rice, or until rice is tender, but with a small amount of liquid remaining.
2. Remove from heat and stir in remaining ingredients until well blended. Cover and let stand 2-3 minutes to develop flavors.
