Baked Zucchini and Tomatoes
Serves 6
Ingredients:
1 tablespoon butter1 clove garlic, minced
1/4 cup chopped onion
3 tomatoes, quartered
3 cups sliced zucchini
2 cups dry bread crumbs
Melt butter in skillet. Add garlic and onion and cook until brown. Stir in tomatoes. Place half the zucchini in buttered 2-quart baking dish. Add half the tomato mixture and half the bread crumbs. Repeat layers. Bake at 350°F for 1 hour
