Lemon Cheesecake
Serves 6
Ingredients:
1 (3-ounce) box lemon jello1 cup boiling water
1 can evaporated milk, chilled
1 cup sugar
1 (8-ounce) package cream cheese, softened
2 teaspoons lemon juice
lemon zest from 1 lemon
1/2 cup butter, melted
28 graham crackers squares, crushed
Dissolve gelatin in boiling water. Cool. Whip milk until thick and add to gelatin. Blend sugar and cream cheese. Stir into gelatin mixture. Add lemon juice and rind. Mix butter and graham crackers. Press half in bottom of 9-inch square dish. Spoon in filling and top with remaining crumbs. Chill.
