Broccoli Beef Stir-Fry
Serves 4
Ingredients:
1 pound boneless beef sirloin or boneless beef top round steak, 3/4 inch thick2 tablespoons vegetable oil
2 cups fresh broccoli florets
1/2 teaspoon ground ginger
1/4 teaspoon garlic powder or 2 cloves garlic, minced
1 (10 3/4-ounce) can CAMPBELL'S condensed tomato soup
2 tablespoons lite soy sauce
1 tablespoon vinegar
4 cups hot, cooked rice
1. Slice beef across the grain into thin strips.
2. In 10-inch skillet or wok over medium-high heat, in 1 tablespoon hot oil, stir-fry half of the beef until browned. Remove set aside. Repeat with remaining beef.
3. Reduce heat to medium. In same skillet, in remaining 1 tablespoon hot oil, stir-fry broccoli, ginger, and garlic powder until broccoli is tender-crisp.
4. Stir in soup, soy sauce, and vinegar. Heat to boiling. Return beef to skillet. Heat through, stirring occasionally. Serve over rice.
