Bacon-Florentine Fettuccine

Serves 4

Ingredients:

1 (16-ounce) package fettuccini pasta, uncooked
2 (10-ounce) packages frozen, creamed spinach
1/2 pound bacon, crisply cooked and chopped
1/8 teaspoon garlic powder
1/2 cup plus 2 tablespoons grated Parmesan cheese, divided
pepper to taste

Prepare fettuccine as directed on package drain, reserving 3/4 cup of cooking liquid. Return fettuccine and reserved liquid to the saucepan. Microwave spinach as directed on package. Add spinach, bacon and garlic to saucepan. Transfer to a serving dish and stir in 1/2 cup cheese. Season with pepper and sprinkle with remaining cheese.
