Cheese and Onion Potatoes

Serves 4

Ingredients:

1/4 cup butter or margarine
4 medium unpeeled red potatoes, sliced 1/4 inch thick
2 tablespoons dried minced onion
pepper to taste
1/3 cup shredded Cheddar cheese
Chopped fresh parsley

In a skillet, melt butter over medium-high heat. Add potatoes, onion and pepper toss to coat. Cover and cook, stirring occasionally, until potatoes are tender, about 10 minutes. Uncover cook until potatoes are browned, about 5-7 minutes. Top with cheese. Cover and remove from the heat let stand for several minutes. Sprinkle with parsley before serving.
