Sally's Hawaiian Chicken
Serves 8
Ingredients:
2 pounds boneless skinless chicken breast halves1/2 cup low-sodium, low-fat chicken broth
1 (20-ounce) can pineapple chunk, packed in juice, undrained
1 cup sliced mushrooms
1/2 cup chopped bell pepper
1 medium onion, chopped
1/2 cup water
2 tablespoons lite soy sauce
2 teaspoons chicken bouillon powder
1/2 teaspoon ginger
1. Preheat oven to 375°F.
2. Brown chicken in nonstick skillet for 3 minutes on each side.
3. Combine all ingredients in large baking dish.
4. Bake uncovered for 30 minutes or until chicken is cooked.
