Garlic Sticks

Serves 4

Ingredients:

2 tablespoons extra-virgin olive oil
4 slices day-old white bread
2 tablespoons grated Parmesan cheese
2 cups garlic minced
1 teaspoon dried oregano

1. Preheat the oven to 375°F. Spray a baking sheet with nonstick cooking spray. Pour the oil into a small bowl.

2. Cut each slice of bread into 5 even strips, about 3/4 inch wide. Arrange on a piece of wax paper. Brush each strip lightly with the oil on both sides.

3. In a small bowl, combine the cheese, garlic, and oregano. Sprinkle this mixture over the strips, pressing with your fingers to make the crumb mixture adhere.

4. Place on the prepared baking sheet and bake until lightly browned, about 13 minutes.

NOTE: Day-old bread isn't necessarily just a day old--it's a term that began when bread was homemade without preservatives and grew stale after a day or two. Feel free to use any bread that's been around long enough to have a firm texture--for some, that might be over a week. Rye, pumpernickel, and whole-wheat breads are delicious variations.
