Bring on the Fresh Fruit

I know, I know. You've heard it all before. It's important to eat lots of fruit. Fruit contains essential vitamins, minerals, and fiber that may help protect you from chronic diseases. Compared with people who consume a diet with only small amounts of fruits, those who eat more generous amounts as part of a healthful diet are likely to have reduced risk of chronic diseases, including stroke and other cardiovascular diseases, and certain cancers.
They're also wonderful because of the "grab and go" factor. We can eat an apple or banana in the car with much less trouble than we can eat that typical fat-loaded, weight-inducing, drive-through junk food! We can fly with an orange in our under-the-seat carry on and have a great snack mid-air. Its juiciness satisfies thirst and its fiber satisfies hunger.
All this said, don't you just love these next few months - hope is bright with the expectations of spring, summer, and fall fruit. Oh the joy. So I thought you'd like yet another recipe - a very unique one - to add to your fruit repertoire. You'll use this for every season because it adapts to whatever fresh fruit is on hand.
Fresh Fruity Burrito
Serves 42 large peaches (or other fruit in season), thinly sliced
4 (8-inch) flour tortillas
2 Tbsp butter
Cinnamon to taste
2 Tbsp brown sugar
Whipping cream (optional - maybe for you, but certainly not for me!)
