Herbed Chicken Bites
Serves 5
Ingredients:
1/4 cup plain dried bread crumbs2 tablespoons grated Parmesan cheese
1 tablespoon all-purpose flour
1 teaspoon dried oregano
1 teaspoon dried basil
1/8 teaspoon ground white pepper
2 tablespoons milk low-fat, (1%)
1 1/4 pounds boneless skinless chicken breast halves, cubed
1. Preheat the oven to 375°F. Line a baking sheet with parchment paper or spray with nonstick cooking spray.
2. In a quart-sized zippered plastic bag, add the bread crumbs, cheese, flour, oregano, basil, and pepper shake to mix.
3. In a medium bowl, add the milk and chicken pieces, stirring to coat. Place 4-5 chicken pieces in the bag and shake gently until lightly coated. Place on the prepared baking sheet, then repeat with the remaining chicken.
4. Bake until golden brown, about 25-30 minutes.
NOTE: If you do not have a zippered bag, you can mix the crumb mixture in a bowl, add the chicken cubes 4-5 at a time, and stir to coat.
