Desserts to Die for:
Super Easy Mini Cheesecakes

I don't really love cheesecake, but these are wonderful. Not only do they taste good, but they're super easy and fun (making them perfect for party planning). Beautiful looks, beautiful taste. That should be a motto for the kitchen.


Mini Cheesecakes


Ingredients:
2 (8-ounce) packages cream cheese, softened
2 eggs
1 teaspoon vanilla extract
3/4 cup sugar
vanilla wafer
fruit topping/chocolate chips/ or anything you desire


Directions:
Beat all ingredients besides vanilla wafers and toppings. Put one vanilla wafer at the bottom of a muffin liner in a muffin tin. Fill cups 1/2 to 3/4 of the way full with filling. Set oven to 350 degrees Fahrenheit and bake for 25 minutes. Add toppings after cooled sufficiently.
