Disneyland Blue Bayou Gumbo

You can serve this over rice, or in a bread bowl- Disney style!

Ingredients:
1/4 cup Land O Lakes Salted Butter
1/4 cup Gold Medla All Purpose Flour
2 medium Yellow Onions 1/4 in. dice
1 cup Celery 1/4 in. dice
2 quarts Chicken Stock
1 cup okra cut
12 ounces chicken
1 can diced Albertson's Whole Peeled Tomatoes 6 oz.
1 teaspoon Tones Cajun Seasoning
1 teaspoon gumbo file
1 tablespoon Albertson's Salt use to taste
2 cups cooked rice
Directions:
Place room temperature butter in small saute pan over very low heat. Slowly whisk in flour until very smooth. Continue whisking until roux is the color you desire (blond or brown).
In a large pot heat 1-2 tablespoons of oil and saute the onion and celery for about 5 minutes.
Add the stock and the roux. Make sure the roux is dissolved completely.
Add the remaining ingredients (except gumbo file and salt) and return to simmer. Add in little salt at time, to taste.
Add chicken and make sure it is completely cooked.
Add gumbo file. Mix well and serve over rice, or in a bread bowl.
Optional to use chicken andouile sausage or shrimp.
Optional to also add any of the following:
1/4 inch dive green bell peper
1 tablespoon minced garlic
2 tablespoons freshly chopped parsley
