Sausage and Peppers

Ingredients:
fresh ground pepper to taste
kosher salt to taste
2 cloves garlic, minced
1 onion, diced
1 green pepper, diced
1 red pepper, diced
1 teaspoon crushed red pepper
1 teaspoon ground thyme
1 teaspoon paprika
1 teaspoon garlic
1 bsp fresh ground pepper
1 tbsp kosher salt
1 pound ground pork


Directions:
In a bowl, mix the pork with the first 6 spices until they are evenly distributed throughout the meat. In a saute pan, cook the pork over medium heat until there is no pink left. Remove the pork from the pan and drain most (but not all) of the fat from the pan. Cook the onions in the pan over medium high heat until they begin to soften, about 3 minutes. Add the peppers to the pan and cook through, about 5-7 minutes. Add garlic to the pan until it begins to be fragrant, about 1 minute. Scoop into a bowl and serve.
