Oven Baked Salmon

12 ounces salmon fillet, cut into 4 pieces
1 coarsegrained salt
freshly ground black pepper
Directions:
Preheat the oven to 450 degrees F.
Season salmon with salt and pepper. Place salmon, skin side down, on a non-stick baking sheet or in a non-stick pan with an oven-proof handle. Bake until salmon is cooked through, about 12 to 15 minutes.
Cook's Note: If you find you have a fresh piece of salmon or frozen salmon, I recommend cooking your salmon medium for best flavor and moisture. All potentially harmful bacteria isn't present in fresh salmon or is killed by the freezing process (salmon is a frequently used fish in sushi and tartare preparations.) In any circumstances, do not wait until the outside is considered "flaky" because that markes all of the juices having dried out.
