Baked Potato Bar


Serves: 4

Crispy on the outside, soft and delicious on the inside and topped with your favorite toppings.



Ingredients:

8 russett potatoes (one per person with leftovers)
extra virgin olive oil
coarse sea salt
freshly ground black pepper
TOPPINGS
butter
cooked and crumbled bacon
lightly steamed broccoli
chili
chopped ham
sliced green onions
grilled onions
chopped avocados
salsa
grated cheese
chopped tomatoes

Directions:

1. Move oven rack to center. Preheat oven to 350°.

2. Scrub potatoes with cold water. Do not soak. Dry with a paper towel.

3. Poke potatoes all over with a knife.

4. Pour a little olive oil in your hand and rub on each potato.

5. Sprinkle with salt and pepper.

6. Place directly on oven rack.

7. Cook for 60 minutes. Potatoes are done when you squeeze them, using a hot pad.

8. Serve on potato per person. Have toppings of choice in small bowls. Everyone adds the toppings they want.
