Skillet Taco Salad
A favorite! This is fast and easy.
Ingredients:
1 lb | ground turkey |
1 Tbsp | oil |
1/2 | large yellow onion, chopped |
1 | medium red bell pepper, chopped |
6 cloves | garlic, chopped |
1 Tbsp | ground cumin |
1 tsp | chili powder |
1/2 | large jalepeno pepper, chopped |
1 can | refried beans |
shredded cheese | |
TOPPING IDEAS | |
tomatoes, chopped | |
lettuce, chopped | |
spinach, chopped | |
green onion, sliced | |
shredded cheese | |
guacamole | |
Greek yogurt | |
olives | |
fresh, chopped cilantro | |
Directions:
1. In a large skillet, brown the turkey meat in the oil.
2. Add the onion, peppers, garlic and spices and cook until the meat is cooked through.
3. Top with refried beans, then cheese, and place the entire skillet in the oven at 350 F for about 10-15 minutes or until the cheese is fully melted.
Top with your choice of toppings, and serve.
