Pull That Pulled Pork Out of the Freezer!

Well, if you have any in your freezer, that is. And if you don’t, plan now, going forward, that you definitely will get some into your freezer soon.


And why? First of all, those of you who use this meat often know how easy it is to prepare. You might have a better way (and if you do, please pass your wisdom on), but all I do is place a pork roast in my slow cooker with a bottle of our favorite barbecue sauce. I add a dash or two of liquid smoke and let it cook throughout the day on low. Come time for the evening meal, it’s ready. That’s it—no muss, no fuss.

You really ought to do this at least once or twice a month, because it freezes really well. It’s just smart meal-management to have some available.


And on top of being easy to prepare and freezing well, pulled pork is incredibly versatile to us. You can do so much with this ingredient. So this is for those that have some on hand, and for those that plan to follow this advice.

Either pull it out of the freezer, or cook some up, then take a look at all the things you can do with it (besides slathering it over your favorite bread, bun, or roll):


1. Serve pulled pork inside of corn tortillas with a generous addition of slaw. This is an amazing variation on the tradition shredded beef, chicken, or seafood version.


2. Top your baked Russet or sweet potato with pulled pork. There’s no reason a baked potato can’t count as dinner when it has the right toppings. And pulled pork is a very right topping. Whether atop a Russet or a sweet spud, just add some sour cream and scallions and you have a hearty main dish. (A salad on the side never hurts rounds it all out.)


3. Stuff enchiladas with pulled pork. Add shredded cheese, some hot sauce or salsa, roll ‘em up, cover with enchilada sauce, and bake. This is one of the most flavorful renditions of enchiladas we’ve ever had.


4. Pulled pork is so good when added to a grain or noodle bowl. Add in some steamed veggies and voila, dinner is on!


5. And make pizza. Forget the barbecued chicken version. Barbecued pork makes a wonderful pizza. Better make plenty, though. Folks will be begging for seconds and thirds.


6. Make an historic hash. You don’t need a recipe for hash and you don’t need to save this dish for breakfast or brunch. It’s perfect for supper as well. This is a tried and trued “kitchen sink” entrée (toss everything but the kitchen sink into your pan, bake, and you have supper).

7. Finally, why not put a batch of nachos together using pulled pork? It works.
