One Pot Creamy Cajun Pasta Bake

Ingredients:
16 ounces | whole wheat pasta |
12 ounces | cajun style chicken sausages sliced (or whatever chicken sausage you can find) |
1 | onion, diced |
2 | red, yellow and/or green bell peppers, diced |
2 stalks | celery finely chopped |
1 (29-ounce) can | can crushed tomato |
1 (14-ounce) can | tomato sauce |
2 cups | chicken stock |
3 teaspoons | low sodium creole or cajun seasoning |
1/2 teaspoon | pepper |
2 stalks | green onions, sliced thinly |
1/2 cup | OPA Greek Yogurt Jalapeno ranch salad dressing |
Directions:
1. Heat a large pot over medium heat.
2. Add the sausage, onion, bell pepper, and celery and cook until browned.
3. Add remaining ingredients except the OPA Greek Yogurt Dressing.
4. Bring to a boil, lower to a simmer and cover with a lid.
5. Simmer 15-20 minutes stirring occasionally, or until the liquids have thickened and pasta is tender.
6. Stir in the OPA Greek Yogurt Dressing and serve topped with additional spring onion if desired.
