Grilled Taco Chicken and Black Bean and Mango Salsa!
Can you believe April is almost over?? That also means May is almost upon us, which also means my second favorite day of the year is coming up- Cinco de Mayo (come on, nothing beats Christmas;) ). For one, it’s my birthday- so I guess I’m a little biased ;). Second, I love burritos, tacos, and all things “Mexican” food. Give me some nachos or a smothered burrito and I’m a happy woman! In honor of Cinco de Mayo, I love sharing some tasty food ideas that are appropriate for such a holiday. Especially one that is sure to be a show-stopper !
I recently tried a new recipe that was absolutely delicious and I knew I needed to share with you! My husband raved about it and said it definitely needed to get in the regular rotation of things. He’s usually my bar against which I measure ;). If he approves, I know you will too! This recipe is awesome! It’s tangy, tasty, and so easy! Just remember to read the directions all the way through- it requires a few hours of marinating, which is not something you want to be reading when you’re trying to get dinner ready at 6:00 at night! (Which may or may not have happened to me;) ). But with a little thinking ahead, this recipe is so simple, and the perfect weeknight meal!
I don’t have a grill, so I just used a regular ol’ frying pan. While it’s probably definitely more fun to grill the chicken the right way;), when in a pinch, your stovetop will do just fine. (Or if you’re craving this and it happens to be snowing outside-which is totally plausible here in Utah this time of year!). I actually marinated my chicken overnight for simplicity’s sake, and it was so flavorful! It was also so nice to just be able to pull the chicken straight from the fridge almost completely ready to go. It’s the meal everyone needs for a busy weeknight when you’re craving something delicious!
While the chicken itself was very tasty, my personal favorite was the salsa we made to accompany it- Black Bean and Mango Salsa.
I love mango salsas, and I love avocado, so putting the two together is like heaven for my tastebuds! The red wine vinegar and lime juice give it a sharp tang that goes so well with the sweet mango. The salsa overall is so refreshing- perfect for a Cinco de Mayo celebration, or a sunny barbecue day! I’ll definitely be making this salsa for more than just the grilled taco chicken! Throw it on some nachos, inside a quesadilla, on top of fish tacos- all would be heavenly!
