Of German Pancakes and Fathers

Happy Father’s Day Weekend to all of you fathers and grandfathers! I have such a great appreciation for all the fathers in my life- my father, my father-in-law, my grandfathers- but very particularly, I am grateful for my sweet husband, Anthony.

At the young age of 26, he is the sole provider of a wife and 3 children- I can’t imagine the pressure that entails! Yet he works hard and diligently to make sure we are taken care of, and goes above and beyond to help us achieve our dreams. He is a wonderful example to our children. He plays, wrestles, reads, cuddles, and teaches. He is everything I could hope for in a father. The role of fathers in the home is so crucial, and I am grateful that my children have been blessed with a good man for their father.

So naturally, I love to spoil Anthony for Father’s Day, and that often includes making his favorite breakfast- because what better way is there to say I love you than through breakfast food? ;) His all-time favorite breakfast food is German Pancakes. I had never heard of these before marrying him, but I know them very well now! They are basically a really eggy pancake and I think they are wonderful! I’m always happy to oblige him by making these;).

My husband usually just loads his with maple syrup, but you could put Nutella and strawberries, whipped cream and mixed berries, peaches, banana slices and pudding, strawberry yogurt mixed with whipped topping or whatever you want! I would compare them to a crepe in the sense that you can basically put whatever you want on it and it will still be divine ;).

One side note I should mention. This recipe says it serves 4; my husband could eat this whole thing by himself easily- not that he should;). But keep that in mind if you make these! They are light and easy to down unless you have some filling toppings to go with it. You’ll definitely want to double it, and possibly make even more depending on how many you are feeding!

To help with this I also usually make a breakfast skillet to go with it. I just dice some potatoes and cook them until they are almost done; then add eggs, cheese, and bacon or sausage if I have it on hand. My kids scarf this stuff. I don’t really have a recipe because it changes every time depending on what I have and how hungry everyone is;). I usually do 4-5 potatoes, 5-7 eggs, and a good cup (or more;) ) of cheese. I also like to brown it a little til the cheese gets a little crispy, and season it all with seasoning salt. So tasty!
