BBQ-Ranch Chicken Salad
This is a favorite salad to use up leftover chicken. Just mix the cooked chicken and the 1/2 cup BBQ sauce together.
Dovetailing Tip: Instead of cooking chicken, use the leftover chicken from Meal 1 and add 1/2 cup BBQ sauce to it.

Ingredients:
2 bags | spring mix lettuce |
1/2 bunch | cilantro |
1/2 bunch | green onions |
1 can | black beans, drained |
1 can | corn, drained |
1 | red pepper, chopped |
2 cups | Cheddar cheese |
1 | lime |
1 bag | corn chip |
4 | chicken breasts |
1/2 cup | bbq sauce |
DRESSING: | |
1 1/2 cups | ranch salad dressing |
3/4 cup | bbq sauce (sweet baby rays is my fave) |
Directions:
1. Place chicken into a 9×13 pan that has been sprayed with cooking spray. Pour your BBQ sauce over the top. Bake at 400 for about 25-30 minutes. When it has cooled, chop it into 1 inch pieces.
2. Chop up your lettuce greens, cilantro, and green onion and place in a large bowl.
3. Add your corn, beans, and chopped red pepper to the salad greens. Add your chicken, chips, cheese, and squeeze the lime over all.
4. Mix the dressing ingredients together and serve alongside the salad.
