Pulled Pork Gyros
I love summer cooking in the slow cooker. Low heat to keep the kitchen cool, ready when you get home from work or play, easy cleanup. This is a family favorite recipe for the slow cooker.
Dovetailing Tip: Your meal today will be quick and easy – To make the Pulled Pork Gyros, take out the pulled pork you save from Meal 1. Stir in 1-3 teaspoons of the Greek Seasoning, to taste. Heat the pork on low heat, in a covered saucepan, adding a few tablespoons of water to keep it moist. (The recipe included here is a good recipe to use at a later time to make pulled pork).

Ingredients:
2 pounds | pork loin or pork roast |
1 | batch homemade or bought greek seasoning blend |
1 | large yellow onion, diced or thinly sliced |
2 cloves | garlic, minced |
1/2 cup | water |
1 | batch homemade greek tzatziki sauce |
6 | Greek pita bread |
TOPPINGS: | |
chopped red cabbage | |
sliced red onion | |
sliced tomato |
Directions:
Add the onions, garlic and pork in the slow cooker. Add the Homemade Greek Seasoning Blend and pour the water over. Cook on LOW for 6-8 hours or on HIGH for 4-5 hours, turning the roast over halfway into the cooking process. Shred the pork on a plate with two forks. Return it to the slow cooker and simmer for a few more minutes to allow the juices to absorb into the shredded meat. Add more Homemade Greek Seasoning if desired (if adding more, cook the shredded pork for a few more minutes).
Serve on warmed flat bread or in pita pockets with the tzatziki sauce and accompaniments.
