I love hominy, but forget to buy it. This is a wonderful and flavorful dish. I like to serve it with tacos for a change from the traditional refried beans.

Ingredients:
2 (15-ounce) cans | white or yellow hominy, rinsed and drained |
1 (16-ounce) can | diced tomato |
1 (4.5-ounce) can | diced green chili |
1 teaspoon | ground cumin |
1 clove | minced garlic |
chopped fresh cilantro | |
salt and pepper to taste | |
shredded monterey jack cheese (optional) |
Directions:
In a saucepan over medium heat, stir together hominy, tomatoes, green chiles, cumin, and garlic. Cook about 7 minutes. Stir in cilantro. Remove from heat, divide into bowls, and top with cheese.
