Celebrate Dr. Seuss's Birthday With These Healthier Options!

March 2nd is coming up, and to some, that might just be another day on the calendar, but it’s actually Dr. Seuss's birthday! My 6 year old is learning to read and we’ve been exploring the wonderful world that is Dr. Seuss. I love the creativity in his books, and my son does too! What better way to celebrate his birthday than by reading his books- with some fun food of course!

Usually, I like to include a couple treats, but this year I’m on a specific meal plan and I’m trying to avoid sugar! So we’re going with some healthier options- and there’s no shortage of fun you can have with some lower-calorie foods!


*Cat in the Hat smoothie- I’ve seen a lot of different variations on the internet, but most of them layer red Jello with Cool Whip- not exactly the healthiest option ;). However, you could easily achieve the same look by layering Vanilla Greek yogurt with pureed strawberries! A filling and tasty breakfast for sure! Or if you’d like a little more sweetness, here’s a delicious recipe for Strawberry Cheesecake parfaits that will be cute and tasty!

*If your kids are not into Greek yogurt, you can still serve a fun Cat in the Hat breakfast with pancakes! You could make them even healthier by using whole wheat pancake mix, but either way they’re sure to please your kiddos! Just get crafty with strawberries, whipped cream, Nutella, and turkey bacon to complete the look!


*If you’re not loving the breakfast route, there are so many ways to achieve the “Cat in the Hat” look. Try slices of fresh mozzarella with tomato or bananas and strawberries!


*With a some cheddar, provolone and a little creativity, you can make a “cheesy” Lorax! Pair it with broccoli “trees” and you have a healthy, filling lunch that your kids will definitely get a kick out of.


*If you’re wanting to avoid dairy, here is a great alternative! You can create this darling Lorax with mandarin oranges and pineapple. You can add a Truffula tree by wrapping a pretzel rod with a fruit roll up and getting crafty with pineapple. My kids would be so excited to eat this for lunch, and I know I would have a blast making it!


This is just adorable. My daughter loves egg salad sandwiches, and I think she would go crazy for this adorable lunch! You would need to be a little handy with a knife, but cut out some cute shapes for the body and feet, a banana for the trunk, apple slices for the ears, and use little bits of marshmallow halves for the eyes and toes. Complete the look with a nest of pretzels- so, so cute!


Is there anything more Dr. Seuss-y than green eggs and ham?? You could do this with scrambled eggs and bits of ham, or soak your eggs in colored water to achieve these adorable green deviled eggs!

Hopefully these ideas get you thinking- what a great way to get your kids excited about healthy food and reading at the same time!
