Cucumber Sandwiches That Are Actually To Die For!


Have you ever come across a recipe that you think is going to be blah, and it turns out amazing? Or someone makes a recipe and you’re a little hesitant to try it- but then keep going back for more?

I definitely have. Let’s be honest- cucumber sandwiches just don’t sound that appealing. I like cucumbers as much as the next guy, but a cucumber sandwich? Eh, it just doesn’t sound amazing. Especially when set out on a table next to several other appetizers that are calling my name!

But don’t let these little guys fool you. They are ABSOLUTELY amazing. I have to be careful to make them right before an event, because I literally have no self-control and can’t stop eating them. And maybe you’re thinking that’s just me- but just last week I took these to a gathering and more than one person came up and said “These are so good! I can’t stop eating them- I’ve literally already had 4”. They are even HUSBAND-APPROVED. I feel like sometimes that’s the most tried and true stamp of approval to strive for- and my husband loves these.

They’re also super simple to make, which is always a good thing in my book. You literally beat a couple ingredients together, slice some bread and cucumbers and assemble them from there.

Why are these so good? Well for one, cucumbers are pretty tasty- I’m not the biggest fan of cucumbers by themselves, but they pair so well with other things because they compliment the flavor, and just give a certain freshness to the recipe. Instead of feeling like you’re dipping into something greasy and heavy, cucumbers are light and refreshing- and honestly, they’re very visually appealing as well!

You also have to make sure you get the right kind of bread. I’ve tried this recipe with a few different breads, and hands-down my favorite has been using a wheat baguette. The harder bread goes so well with the cucumber, and the wheat definitely adds to the flavor!

And then of course, you have the spread itself. It’s just so good. Low-calorie? Eh… maybe not so much, but we all need a little fat in our diet right? ;) And these are definitely healthier than many appetizers you’ll find out there!

The dill sprinkled on top is optional… but I’d personally say it’s a definite must! The sandwiches taste just fine without it, but you’ll be missing out on that tiny dash of flavor that just completes the whole thing. Plus, it just looks so beautiful from a presentation aspect!
