The BEST Homemade Chicken Noodle Soup Ever!


You know you’re onto something when after your daughter takes a bite of the meal you just made and says, “My favorite food used to be cheeseburgers…..now it’s this!!”

I mean--beating cheeseburgers?! From In ‘N Out?? That’s definitely an accomplishment! I’ll take it!

My husband has been feeling under the weather the last few days—you know that pesky cold that always seems to appear this time of year—and one day he actually got a migraine on top of that pesky cold, poor thing! My seven year old daughter LOVES taking care of Dad when he’s not feeling well. She’ll grab armfuls of pillows and cozy blankies and tuck him in, snug as a bug. She’ll offer to get him cold drinks or cozy socks. She always seems to make him the sweetest “feel better soon” cards. Here is her latest :)


She really is the sweetest little thing! Well, she had the brilliant idea of suggest I make homemade chicken noodle soup. I had only made it a time or two before, but with this new recipe I tried this time--it was an absolutely smashing family success of a meal (for everyone--not just the sickies!) and it seems like it will be in our rotation where I’ll probably make it a time or two every month.

Now, the secret of what makes this so incredibly delicious is you whip up your own homemade egg noodles. That sounds intimidating but I assure you, it is very easy! My husband’s mom used to always make her kids homemade chicken noodle soup so it is in my husband’s soul to love that comforting meal and the extra effort it takes to make those homemade noodles. 

I remember she tried teaching me her ways of making the noodles simply by adding a little pile of flour to the kitchen counter, cracking an egg right on top, and mixing it together to form the noodle dough, right there on the countertop. Then you roll it out, slice it with a pizza cutter, add it to your simmering broth with chicken and carrots, and voila! The perfect comforting, cozy meal for any old day!


I used a recipe that adds just a touch more to the dough--a little pinch of salt, dab of butter, and a tablespoon or two of milk. These were all great additions--the noodles have never tasted better.

The Best Chicken Noodle Soup from Scratch

Serving size: 6

Ingredients:
egg noodles:
1 1/4 cups flour
1 pinch salt
1 egg, beaten
1/4 cup milk
1/2 tablespoon butter, softened

soup:
2 tablespoons butter
3/4 cup chopped onion
3/4 cup chopped celery
1 cup sliced carrots
2 garlic cloves, minced
9 cups reduced sodium chicken broth
2 cups uncooked egg noodles
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
(optional) dash of poultry seasoning
salt and pepper to taste
2 cups cooked and shredded chicken breasts


Directions:
For the noodles: In a large bowl, stir together the flour and salt. Add the beaten egg, milk, and butter. Knead dough until smooth, about 5 minutes. Let rest in a covered bowl for 10 minutes.

On a floured surface, roll out to ? or ¼ inch thickness. Cut into desired lengths and shapes.

Separate and allow to air dry before cooking. For best results, let them air dry for a couple of hours but I’ve been in a rush and only let them dry 30 minutes and they were fine.

For the soup: In a large pot over medium heat, melt the butter. Cook onion, celery, and carrots in butter until just tender, 5 minutes. Add the garlic and cook for an additional minute. Pour in chicken broth and stir in noodles, basil, oregano, (optional) poultry seasoning, salt and pepper. Bring to a boil, then reduce heat and simmer 20 minutes. Stir in the chicken and cook until heated through. Serve.
