These crisp-tender snap peas are ready to go with a quick boil and a simple dressing of olive oil and freshly chopped tarragon.

Ingredients:
1 pound sugar snap peas
2 tablespoons chopped tarragon
1 tablespoon olive oil
salt and pepper to taste


Directions:
Cook 1 pound sugar snap peas in boiling salted water until crisp-tender, about 4 minutes.

Drain and toss with 2 tablespoons chopped tarragon, 1 tablespoon olive oil, and salt and pepper.
