Cherry Surprise Cake!
We’ve been cooking and baking a lot more lately, and trying to involve our kids as much as we can! We’ve actually been letting them choose a menu and then help us prepare it, and it’s been such a fun way to try new things and get our littles involved in the kitchen.
When it was my 6 year old daughter’s turn, she was SO excited to choose out a dessert. She looked through my cookbooks, my Pinterest boards, and finally came across a Cherry Surprise Cake. Once she saw it, she was obsessed! I offered some suggestions of other desserts that I thought she might prefer, but she was dead set on her Cherry Surprise Cake- maybe it was the “surprise” factor, maybe it was the sprinkles- both things she loves!
We picked out her menu a week before we were actually going to prepare it, so that I would have time to get the necessary ingredients. Almost daily, she would wake up and look at the calendar and ask how many days until her “cooking day”. She was so excited to try this cake!
When it was finally time to prepare the food, the first thing she asked about was the cake, and she tried waiting so patiently ‘til it was the baby’s naptime and we had time to bake. She was GRINNING the whole time, delighted that she got to actually hold the electric beater, scoop in cherries, and load on the sprinkles. The baking process alone made this cake worth it for me!
As happy as she was with the actual making of the cake, she was equally delighted with the dessert itself!
To be honest, I was a little skeptical when she first picked it out. I love cherry filling with certain things, but with funfetti cake mix? However, I was pleasantly surprised at how this dessert turned out. It hit the spot! Bundt cakes are just fun to make- they’re beautiful with minimal effort, easy to cut- and they always turn out so moist! Having a little extra cherry “surprise” in there just made it extra fun! And it was super easy to do. Simply put in half the batter, making sure to leave an indent, put in your cherry pie filling, and top it with more batter! (Just be careful not to let the cherries touch the sides).
The funfetti cake mix and cherry combo was fun- but I think if I was to make this cake again I would experiment with different combos! An almond poppyseed cake with cherries would be killer! And you could definitely experiment with so many different varieties:
- Pumpkin filling with spice cake mix
- Vanilla cake mix with peaches (and maybe some cream!)
- Lemon cake mix with blueberry filling
- Strawberry cake mix with strawberries or lemon pie filling
- Dark chocolate cake mix with raspberry jam
- Spice cake mix and apple filling
Seriously, with cake mix and pie filling you could recreate this cake in so many ways! And it’s a super easy cake to make, that is sure to bring a smile to anyone’s face!
Cherry Surprise Cake
This Cherry Surprise Cake has a surprise cherry pie filling, and is made extra moist with the addition of greek yogurt and coconut oil!

Ingredients:

For the Cake:
1 box funfetti cake mix
1 (3.4-ounce) package instant vanilla pudding
1 cup plain greek yogurt or sour cream
3/4 cup Coconut Oil, melted (or vegetable oil)
4 large eggs
2 to 3 tablespoons colored sprinkles
1 1/2 cups cherry pie filling
For the Icing:
1 cup powdered sugar
1 tablespoon milk
more colored sprinkles
Directions:
Preheat oven to 350 degrees F. Coat a bundt cake pan with non-stick spray and then sprinkle in about 2 tbsp of flour, coat the pan with the flour, discard any excess flour.
In a large bowl combine the cake mix, vanilla pudding mix, greek yogurt, coconut oil, and eggs. Mix on low for 30 seconds, then medium speed for 2 minutes. Add the cake sprinkles if desired and stir until combined. Batter should be thick.
Scoop half of the batter into the prepared bundt cake and spread to an even layer. Use a spatula or spoon to create a valley in the batter, bringing it up on the sides and middle of the pan.
Spoon the cherry pie filling into the valley of batter and then top with the remaining batter, being careful to enclose all the pie filling and not let it touch the sides of the pan.
Bake for 45 to 50 minutes, or until set. Let cool for 10 minutes before inverting onto your cake plate. Let cool completely.
For the Icing:
To prepare the icing simply whisk together the powdered sugar and milk. The icing will be really thick. If you want a thinner icing add just a teaspoon more milk at a time until desired consistency is reached. Pour over the cooled cake, letting it run down the sides. Sprinkle with cake sprinkles if desired. Enjoy!
