16 Delicious Things You Can Do With Apple Cider


It’s not fall if we don’t splurge on some apple cider donuts from the Red Barn! And then last year I found a delicious recipe for an Apple Cider donut cake, and that has definitely been added to our fall recipe repertoire! However, it also means we have a good amount of apple cider leftover. You could easily just drink it- I mean, it’s the fresh, good stuff! But we like creativity here at Cook’n, and so maybe we don’t just want to drink it! Besides, there are SO MANY tasty things you can do with a jug of cider!

  • Mix with yogurt or marshmallow fluff for a tasty fall fruit dip!
  • Cook your oatmeal in it. Add some cinnamon or pumpkin pie spice for a true nod-to-autumn breakfast.
  • Forget rootbeer floats- apple cider floats! Vanilla ice cream is a classic, but shake things up with some caramel flavored ice cream for something truly decadent!
  • Mix it into your pancake batter. Serve with sliced cinnamon apples for an epic breakfast!
  • Freeze in popsicle molds for those not so cold autumn days.
  • Heat up, add cinnamon, and top with whipped cream. Basic fall goodness.
  • Substitute some of the milk and syrup in your overnight French toast recipe with apple cider!
  • Make your own delicious glaze! Simmer it on the stove for several minutes, and then add powdered sugar until it’s thickened to the consistency you want. This would be so tasty on pancakes, cakes, donuts, cinnamon rolls, pumpkin rolls- anything, really!
  • Use it as a marinade for your pork, chicken, or pot roast.
  • Substitute the vinegar in your favorite salad dressing with apple cider!
  • Make your own apple cider donuts at home! There are so many recipes online- try a couple to find your favorite!
  • Add it to your homemade smoothie to make it extra sweet!
  • Make your own apple butter! This is a great way to use up cider because it uses a full 2 cups.
  • Homemade Apple Butter

    Prep time:
    Yield: about 2 cups
    Serving size: 2
    Calories per serving: 945

    Ingredients:
    4 pounds assorted apples, peeled and chopped
    2 cups apple cider
    1 cup packed light brown sugar
    kosher salt
    1 tablespoon fresh lemon juice
    1 teaspoon ground cinnamon
    1 teaspoon vanilla extract
    pinch of ground cloves


    Directions:
    Preheat the oven to 250 degrees F. Combine the apples, apple cider, brown sugar and 1/2 teaspoon salt in a large ovenproof pot or Dutch oven over medium heat. Bring to a simmer, partially cover and cook until the apples are soft, about 20 minutes.

    Remove from the heat and stir in the lemon juice, cinnamon, vanilla and cloves. Puree the mixture in a blender in batches until smooth (or use an immersion blender).

    Return the mixture to the pot and bake, uncovered, stirring every 30 minutes, until thickened and deep amber, 2 1/2 to 3 1/2 hours (the timing will depend on the kind of apples you use). Remove from the oven and let cool completely, then transfer to an airtight container and refrigerate up to 5 days.

    Try it on: Pancakes, waffles, yogurt, oatmeal, grilled cheese, PB&J, biscuits, cornbread or pork chops

  • Make these apple cider biscuits!
  • Apple Cider Biscuits

    Serving size: 12
    Calories per serving: 121

    Ingredients:
    2 cups flour
    1 tablespoon baking powder
    2 teaspoons sugar
    1/2 teaspoon salt
    1/3 cup cold butter
    3/4 cup apple cider
    1/8 teaspoon ground cinnamon
    honey


    Directions:
    In a bowl, combine the flour, baking powder, sugar and salt. Cut in butter until mixture resembles coarse crumbs. Stir in cider just until moistened. Turn onto a lightly floured surface and knead 8-10 times.

    Roll out to 1/2-in. thickness; cut with a 2-1/2-in. biscuit cutter. Place on ungreased baking sheets. Sprinkle with cinnamon; pierce tops of biscuits with a fork.

    Bake at 425° until golden brown, 12-14 minutes . If desired, serve with honey.

  • Cider Jelly

    For a tasty jam during the fall, try this cider. The candy adds a wonderful cinnamon flavor.

    Serving size: 6
    Calories per serving: 80

    Ingredients:
    1 quart unfiltered apple cider or juice
    2/3 cup red hots candy
    1 package powdered pectin
    5 cups


    Directions:
    In a Dutch oven, combine cider and red hots. Stir in pectin. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar; return to a full rolling boil. Boil and stir 1 minute.

    Remove from heat; skim off foam. Ladle hot mixture into six hot half-pint jars, leaving 1/4-in. headspace. Wipe rims. Center lids on jars; screw on bands until fingertip tight.

    Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.
