Easy Christmas Morning Breakfasts
If having a special, unique breakfast on Christmas morning isn’t a thing in your family, or if you are looking for some fresh ideas, I’ve got plenty for you today. It is such a special morning, you can add to the joy and festivity by going all out on breakfast like my mom used to do, or keep it nice and simple like I typically do :)
I seriously don’t know how my mom pulled off Christmas like she used to. The woman had eight children, so was obviously up all night with my dad getting things ready for Santa Claus to come visit and then the next morning would always make an elaborate Christmas breakfast with fancy place settings, tablecloths, etc.
She would make a delicious Christmas casserole with lots of eggs, mushrooms and sausage, with multiple side dishes as well. And she was always so cheerful--you’d never know how exhausted she was! She’s incredible. I think parents are given super powers that are fueled by the joy of children on Christmas morning, right? Every year my husband and I are up all night getting ready for Santa Claus too--it’s astonishing to me that we have never spotted him yet! I swear it’s sometimes only been an hour or two before we are done and the kids wake up and I tell you what! He always knows us grown ups are asleep too because that’s always when he comes. He’s amazing! I don’t know how the Jolly Elf does it year after year! Maybe this is the year I will catch him--fingers crossed :)
Anyway, I love traditions like my mom used to create but I also love trying new recipes all the time and there are so many good ones out there that I have to try, so I wanted to share some fun and easy ideas you could try making this year. 1. Cranberry Scones with Orange-Flavored Glaze
Cranberry and orange are just so great together so I love the idea of these scones on Christmas morning!
2. Gingerbread Muffins with Vanilla Bean Glaze
It’s got all the gingerbread flavor you are looking for, with a yummy vanilla glaze that is reminiscent of the cookie, but with all the ease of a muffin. Brilliant idea!
3. Applesauce Pancakes
Applesauce makes pancakes really fluffy and you can top them off with a lovely caramel apple syrup topping. What a delicious and different Christmas breakfast this would be.
4. Cranberry Sauce Swirl Pound Cake
This is the best use of leftover cranberry sauce I have ever seen. Find a recipe for pound cake with Greek yogurt in it, which makes it extra moist and swirl cranberry sauce into the batter for a delicious sweet and tart cake.
5. Gingerbread Granola
This would be a great one to make ahead of time--classic granola with touches of ginger spice, cranberries, pecans and walnuts and candied ginger. Sounds like a yummy twist on granola to try this time of year.
6. Cinnamon Apple Baked Oatmeal
Make a big batch ahead of time and eat it all week. It’s as good every time as the first time. This is SO good with heavy cream and pecans mixed in at the end.
