ANSWER:

This is something that can only be done on the desktop app.

For ingredients, launch Cook'n on your computer and click View->Ingredients. Once there, find the ingredient and click on it. After you've selected it, you can remove any spelling errors in the boxes on the right hand side.

For units, click View->Units and follow the same instructions.
