Try This Keto Tuscan Chicken aka “Marry Me” Chicken
My husband and I are trying out the Keto diet, which is a high fat/low carb diet, so I couldn’t wait to try this delicious recipe that fits the bill perfectly. It is called “Tuscan chicken” or “Marry Me” chicken. Tuscan chicken is chicken breasts in a sundried tomato cream sauce with plenty of garlic and parmesan. And then there’s “Marry Me” chicken, which is essentially the same thing but the Tuscan chicken includes spinach, while the Marry Me chicken adds a pinch of red pepper flakes. The “Marry Me” part being named that because this chicken is supposedly so good, you make it for your girlfriend or boyfriend and they will want to marry you! Just like that! So remember this recipe if you are someone who is waiting for your significant other to put a ring on it ;)
This meal is so hearty and full of great flavors all melding together to create a creamy, irresistible gravy with plenty of heavy whipping cream, sun dried tomatoes, garlic and parmesan. My whole family gobbled it up and my son proclaimed it as his favorite food.
It is great with any number of things on the side like mashed potatoes, pasta, garlic bread, or if you are wanting low-carb or Keto, I put it over steamed broccoli with plenty of gravy over that broccoli and it was divine.
I have found that with cooking these kinds of creamy sauces with lots of heavy whipping cream in them that you need to make them and be ready to eat as soon as it is first heated through. I’m used to making sauces with mostly tomato-based sauces like marinara or spaghetti sauce where you can just set it to low and it can simmer for a good 30 minutes longer, if needed, while you are finishing up other things for dinner and the consistency of the sauce stays about the same after that extended period. These sauces with heavy cream, however, tend to separate quickly and the sauce can almost be ruined if you leave it to cook out too long. When making a delicious thick mushroom sauce recently this happened and I was mostly able to save it by adding another half cup of heavy cream, or so, and stirred it constantly until I got the consistency back. Then I tried to serve it immediately so it wouldn’t separate again.
Feel free to mix this recipe up a little bit with what you have on hand. It calls for fresh basil, or fresh spinach that will wilt at the end. I didn’t have either of these ingredients on hand and instead roughly chopped up a bunch of fresh parsley that I had and it was delicious! I love fresh parsley and this was the perfect dish to get lots of great flavor with this great fresh herb.

Creamy Keto Tuscan Chicken
For an easy low-carb chicken dinner recipe, try Keto Tuscan Chicken with creamy garlic sauce, sun-dried tomatoes, and spinach. Cooks in only 30 minutes!

Ingredients:

1 tbsp olive oil

Preheat oven to 375F degrees. In a large oven-safe skillet over medium-high heat, heat the olive oil. Season chicken breasts with salt and pepper, and sear until golden (about 4 minutes per side). Transfer chicken to a plate, and set aside
Return skillet to medium heat. Add garlic and cook for 1 minute. Stir in thyme, red pepper flakes, chicken broth, and heavy cream. Simmer for 5 minutes, stirring often. Stir in sundried tomatoes. spinach, and parmesan cheese.
Return chicken to skillet and spoon sauce over the chicken breasts. Place in the oven, and bake until chicken is cooked through -- about 15 minutes, or until it reaches 165F internal temperature. Garnish with grated parmesan cheese, if so desired.
*Notes: I prefer the sun-dried tomatoes that are jarred in olive oil, instead of the kind that are packaged dry.
