This is My New Favorite Casserole Dish to Make

I have always adored chicken cordon bleu--so much that I can actually distinctly remember the first time I had it. In high school I played basketball and the parents would take turns making us a really nice meal before all our home games so we were well fed and had great bonding time together before our games. My friend’s dad made us divine chicken cordon bleu with a creamy sauce on top. I’ve always been obsessed with cheese and ham and sauces and gravy so what’s not to love about a meal that incorporates all of this with crispy chicken to boot?


I still adore this meal, but to be honest, in my mind it takes quite a bit of work, so I love making casseroles that have the same idea and give you all the same tastes, with the ease of being able to throw it all together in a pan and bake it for 30 minutes! I found a fantastic recipe for a chicken cordon bleu casserole recipe that I wanted to share with you today. It is such a hit in our family and I can tell my kids love the chicken cordon bleu flavors as much as I do.

Here are a few fun suggestions from comments to make this recipe your own:

  • Make 1.5x the amount of sauce--mixing half of the sauce into the noodles/meat mixture and spooning the rest on top.
  • This is great to use with rotisserie chicken from Costco and works great to intermix the white meat and dark meat, which some people are picky about. It should get hidden pretty well in this casserole :)
  • You could consider doubling the batch if you have a large family and freeze the second portion for a delicious weeknight meal. Alternatively, if you have just two of you to feed, you could consider making the regular recipe, but dividing it into two smaller pans, and freezing one of them.
  • If you like a little heat, you can add a few splashes of hot sauce and/or crushed red pepper flakes to your bowl of the mixture.
  • I also like to double up on the crumb topping on top as well. You can never have too much sauce or crumbly topping, in my opinion!
  • For a little more flavor to the sauce you could consider adding a tablespoon of Dijon mustard, which goes really well with these flavors. You can also season to your liking--we LOVE garlic in our house, so I added a bit more garlic powder and some of my other favorite seasonings like marjoram, parsley, oregano. I really like this combo of seasonings and it adds a ton of flavor to so many casseroles and creamy dishes like this!
  • You could also just consider making this even faster and just making it up on the stovetop without the crumb topping and serving it once all the casserole mix-ins are nice and hot and combined.

Creamy Chicken Cordon Bleu Casserole

This chicken Cordon Bleu casserole features all the fixings of its namesake baked into a rich, creamy, and delicious dish perfect for entertaining. Recipe Type: Dinner Total Time: 1 hr 15 min

Ingredients:
1 (8-ounce) package wide egg noodles
2 cups chopped cooked chicken breasts
8 ounces cooked ham, cubed
8 ounces Swiss cheese, cubed
1 (10.5 ounce) can reduced-fat, reduced-sodium cream of chicken soup (such as Campbell's® Healthy Request)
1/2 cup 2% milk
1/2 cup light sour cream
2 tablespoons butter
1/3 cup seasoned bread crumbs
1/4 cup grated Parmesan cheese


Directions:
Gather all ingredients.

Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch casserole dish.

Bring a large pot of lightly salted water to a boil. Cook egg noodles in boiling water, stirring occasionally, until tender yet firm to the bite, 7 to 9 minutes. Drain and transfer noodles to the prepared casserole dish.

Top noodles with chicken, ham, and Swiss cheese.

Mix together condensed soup, milk, and sour cream in a medium bowl until combined; spoon over noodle mixture in the casserole dish.

Melt butter in a skillet over medium heat; cook and stir bread crumbs and Parmesan cheese in hot butter until crumbs are well coated, 2 to 3 minutes. Sprinkle over casserole.

Bake in the preheated oven until casserole is bubbling and lightly browned, about 30 minutes. Allow to cool for 10 minutes before serving.
