Two of the Easiest 3-Ingredient Desserts EVER!
Back in the day (1989 to be precise), in the Southern classic “Steel Magnolias," Truvy Jones (played by Dolly Parton), shared her recipe for a cuppa cuppa cuppa cake. Truvy explained that this recipe was so simple "you don't need to write that down."
She then explained to her dear friend Clairee (played by Olympia Dukakis), that she needed just one cup of flour, one cup of sugar, and one cup of fruit cocktail. “And you mix it all together and then you'll bake until ‘gold and bubbly,’ for the sweetest and richest cake ever!” Truvy said.
The pros at www.southernliving.com tested it, and enthusiastically declared that Truvy was on to something. They found this cake to be just as sweet and rich as Truvy promised.
The fruit cocktail gives it feel cobbler-like feel. It also caramelizes around the edges and develops a crispy golden-brown top. It's easy to see why it was a favorite. Cuppa Cuppa Cuppa Cake
unsalted butter for greasing baking dish
1 cup self-rising flour
1 cup sugar
1 (15-ounce) can fruit cocktail undrained
vanilla ice cream or unsweetened whipped cream, for serving
Directions:
1. Prepare oven and baking dish: Preheat oven to 350∞F. Generously grease a glass 8- x 8-inch baking dish with butter, and set aside.
2. Gather ingredients.
3. Combine ingredients: Stir together flour and sugar in a medium bowl until combined; add fruit cocktail with juices, and stir until just combined. Spread batter evenly in prepared baking dish.
4. Bake cake: Bake in preheated oven until top of cake is golden brown, set, and looks dry, about 35 minutes. Remove and let stand 10 minutes before serving.

1 1/2 cups Bisquick Shake 'n Pour Buttermilk Pancake MixÆ
1/2 cup lemon curd
1/2 cup smooth ricotta cheese
Directions:
1. Preheat oven to 350 degrees.
2. Grease a 9-inch square baking pan.
3. Prepare the pancake mix following directions. Pour into the prepared baking pan.
4. Spoon lemon curd over the pancake mixture.
5. Add 1-2 tablespoons of water to the ricotta and stir to loosen. Spoon over lemon curd.
6. Use a knife or skewer to gently swirl the lemon curd and ricotta.
7. Bake on the middle shelf for 20 minutes or until set. Remove from oven.
8. Set broiler on high. Broil cake for 1-2 minutes or until the top is golden. Serve immediately, garnished with sweetened whipped cream or vanilla ice cream. This is divine!
