2 tablespoons olive oil
1 medium onion, chopped
4 garlic cloves, minced
1 1/2 teaspoons ground cumin
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
2 cups uncooked long grain rice
4 cups reduced-sodium chicken broth
2 cans (15 ounces each) black beans, rinsed and drained
2 tablespoons minced fresh cilantro
1 tablespoon lime juice
Directions:
In a large saucepan, heat oil over medium heat. Add onion; cook until soft, 4-5 minutes. Add garlic, cumin, salt, pepper and cayenne; cook 1 minute longer.
Stir in rice, broth and beans. Bring to a simmer; cover. Cook until liquid is absorbed and rice is fluffy, 18-20 minutes. Stir in cilantro and lime juice.
