The recipe given for cheese rolls is my adaptation. These delicious Pão de Queijo are very popular in Brazil and you can even find snack shops by this name. They are very popular in the famous Brazilian rodízios or churrascarias. The cheese rolls in Brazil are made with a flour that we do not have in the United States called povilho azedo and a cheese called queijo de minas, which we also do not have in the United States.
Bring water to a boil. Add butter or margarine, salt. Remove from heat and add flour all at once. Mix rapidly until smooth.
Return to the stove and cook until mixture pulls away from the sides of the pan.
Add eggs one at a time, beating until smooth. Add nutmeg, Swiss cheese.
Mix well and drop dough a scant 1/4 cup onto an ungreased cookie sheet. Paint with unbeaten egg yolk mixed with milk.
Bake in a 375 degrees heated oven until puffed and golden. Serve hot.
