Dissolve yeast in warm milk. Add sugar, salt, butter, eggs. Let rest 10 minutes. Add 3 cups flour and beer. Stir until bubbles appear. Add 2 cups grated Munster or Swiss cheese.
Let rise until double. Cut down with a knife and add 3 cups flour.
Knead well and add 1–2 1/4 cups flour or until you have an elastic dough that does not stick to your hands. Cover and let rise again.
Shape into rolls and let rise until double. Brush with melted butter or egg yolks diluted with milk.
Bake 20 minutes in a preheated 375 degrees oven.
