Fillet meat from bone, making 8 duck breast halves. Wrap each half with a slice of bacon; secure with a toothpick. Layer bottom of a covered container with 1/2 the onion rings; place duck breasts on top. Squeeze lemon over duck; season with pepper. Combine soy sauce and Worcestershire; pour over duck. Sprinkle generously with lemon pepper. Top with remaining onion rings. Marinate 6 hours; turn duck after 3 hours. Cook in a water smoker with the top on for 20 minutes; turn and cook 25 additional minutes. Add salt to taste when cooked.
