* Vanilla Glaze: In a small bowl, mix 1 cup powdered sugar, 1 tablespoon milk and 1/8 teaspoon vanilla extract until smooth. Stir in a drop of food color if desired. Makes about 1/2 cup. In a large mixer bowl at low speed, beat 1 1/2 cups of the flour, sugar, milk, eggs, butter or margarine, baking powder, vanilla, salt, cinnamon and nutmeg until moistened, scraping bowl as needed. Beat at medium speed for 2 minutes. Reduce speed to low and beat in remaining 2 cups flour just until moistened. Cover and chill for 30 minutes.
In a deep heavy saucepan or deep-fat fryer, heat 1 inch of oil or melted shortening to 375°.
Prepare glaze set aside.
On a well-floured surface, roll dough to 1/2 -inch thickness. Dip a 2 1/2 -inch doughnut cutter in flour and cut doughnuts. Re-roll scraps as needed.
Fry doughnuts, two or three at a time, until golden brown, turning once after rising to surface. Remove with a slotted spoon. Drain on paper towels. Dip into glaze and sprinkle with nuts, coconut or sprinkles. Best eaten same day.
