Cinnamon Nut Logs

Ingredients

1 cup butter or margarine, softened
1/2 cup sugar
1/3 cup brown sugar packed
1 egg
2 teaspoons vanilla extract
2 1/2 cups flour
1/2 cup walnuts chopped or pecans
2 teaspoons cinnamon ground
1/8 teaspoon salt
2 eggs white slightly beaten
Finely chopped nuts, sugar or nonpareils

Directions:

At least 2 hours or up to 1 week before serving:

Preheat oven to 350°. In a large mixer bowl at medium speed, beat butter or margarine, sugar, brown sugar, egg and vanilla until creamy. Add flour, nuts, cinnamon and salt. Beat at low speed until mixture forms a moist dough.

Transfer dough to a cutting board and form a ball. Divide dough into eight equal portions. Roll each portion into a 14 x 3/4 -inch rope. Cut each rope into seven 2-inch logs. Place about 1 inch apart on ungreased baking sheets.

Brush top of each log with egg white and sprinkle as desired with nuts, sugar, nonpareils or leave plain. Bake for 18 to 20 minutes or until golden brown. Cool on wire racks. Store in an airtight container.
