Wash mint, leaving stems intact crush or coarsely chop. Place in a large saucepan. Add sugar, water and vinegar. Over high heat bring to a full rolling boil, stirring until sugar dissolves.
Add pectin and food color stirring, bring to a full rolling boil and boil hard for 30 seconds. Remove at once from heat and skim off foam with a metal spoon. Pour through a fine sieve into hot sterilized jars, leaving 1/8 -inch headspace. Wipe rims with a damp cloth. Seal with lids according to manufacturer's directions. Process in a boiling water bath for 5 minutes.
